I once had a customer throw out my honey when it crystalized.  A waste of great honey since all unpasteurized honey will crystalize.

During the winter months unpasteurized honey tends to crystalize faster as rapid crystallization happens between 10-15C.

Here are a few pointers to avoid this from happening:

  • Honey can be placed in the freezer. It will not crystalize in the freezer.
  • Storing honey at temperatures over 25C will slow down the process too.

The crystalizing process does not effect the flavour of the honey and can be used in this form.

To transform back to a liquid just place the honey jar it in a pot of warm water.
